It is safe to say that ancient people could use wild wheat for food, but the peculiarity of wild wheat is the fact that the grains immediately fall off after ripening, and they cannot be collected. Probably for this reason, ancient people used unripe grains for food. On the contrary, grains of cultivated wheat remain in the ear until they are knocked out during threshing. Analysis of ancient spikelets found by archaeologists shows that in the period from 10,200 to 6,500 years ago, wheat was gradually domesticated - the percentage of grains carrying a gene that gives resistance to shedding gradually increased. As you can see, the process of domestication took a very long time and the transition to the modern state occurred more likely under the influence of random factors, and was not the result of targeted selection. Other researchers note that the selection of the first varieties was carried out according to the strength of the ear, which should withstand the harvest, resistance to lodging and grain size. This soon led to the loss of the ability of cultivated wheat to reproduce without human help, since its ability to distribute grains in the wild was severely limited.
Researchers identify three areas in the northern Levant where the emergence of cultivated wheat most likely occurred: near the settlements of Jericho, Iraq ed-Dubb and Tel Aswad, and somewhat later in southeastern Turkey.
The spread of cultivated wheat from the region of its origin is noted already in the 9th millennium BC. e., when it appeared in the Aegean Sea region. Properties and use. Soft and durum wheat varieties have much in common, but clearly differ in a number of characteristics that are important for the use of flour. In flour obtained from soft varieties, the starch grains are larger and softer, its consistency is thinner and more crumbly, it contains less gluten and absorbs less water. Biology. The wheat plant has a culm-stem, characteristic of all cereals, with nodes and usually hollow internodes, and the leaves are simple, linear, alternate, two-rowed. At the border between the vagina and the plate there are three outgrowths - a wide membranous tongue adjacent to the stem, and two finger-like ears covering the latter. Gradually, the moisture content of the grain decreases and its contents begin to resemble sticky dough in consistency (waxy ripeness). Fully ripened (technically ripe) grain is hard.

Main types. Only three types of wheat are of significant economic importance - summer, soft, or ordinary wheat (T. aestivum), durum wheat (T. durum) and dense-eared or dwarf wheat (T. compactum). The first is the common baking wheat grown throughout the world. The second grain is used for the production of pasta because it is rich in gluten - a mixture of proteins that form a sticky mass that not only binds the dough, but also retains carbon dioxide bubbles in it; the dough “rises” and the bread becomes fluffy. Dwarf wheat is mainly used to produce crumbly baked goods. It differs from dwarf by longer, more compact or loose, dorsoventrally flattened ears. In dwarf wheat they are short, dense and laterally compressed. Durum wheat is spring; it differs from summer and dwarf wheat by sharp ridges along the entire length of the glumes and usually spinous lower flower glumes with an awn 10-20 cm long. The straw is non-hollow. It differs from fat wheat only in longer glumes and grains, the latter of which are usually elliptical. In fat wheat, which is practically not grown in America, the grains are short, oval, with truncated tops, so they appear swollen and humpbacked; There are red and white grain varieties. Polish wheat stands out for its appearance. Its spike is large - 15-18 cm long and 2 cm or more wide. The glumes are long, thin, papery, and the grains often reach a length of 13 mm and are very hard. Varieties of this species, like durum wheat, are only spring varieties. Wheat varieties are divided into winter and spring. Winter wheat is sown in the fall and harvested the following summer. It is the most common wheat throughout the world. Starting to develop earlier than spring sown crops, they ripen faster and produce higher yields. Spring wheat, with the exception of T. durum, is grown in areas where winter is too harsh.

  • Firstly, rye varieties are not as diverse as wheat varieties.
  • Secondly, rye has a narrower scope of application than wheat.
  • Thirdly, the grains differ in chemical composition and appearance.
  • Fourthly, rye places more serious demands on both the climate and the selected soil.

Many people are interested in wheat at home, or rather the germination of its grains. It’s really quite easy to germinate wheat grains yourself.

  • Place the small grain in a quart glass jar (Note that the grain should never take up more than 1/3 or even 1⁄4 of the jar).
  • Fill the jar almost to the brim with water.
  • Leave the grains for about 7-8 hours.
  • Drain the water through cheesecloth, rinse the wheat and add fresh water for another three hours.

Similar steps must be repeated several more times, and then let the water drain and place all the grains back into the jar.

After 24 hours, the sprouts should reach a height of a couple of millimeters and the sprouted grains will be ready for consumption.
